BLACKENED SALMON & MANGO-PINEAPPLE SALSA!
This is a great dish as an appetizer or as part of a main course. Cheers everyone!
Fish Ingredients:
2 salmon filets (skin on)
1 tsp coconut sugar (or brown sugar)
1/2 tsp Flavor God “Everything Spicy” seasoning
1 lemon’s worth of zest
Salt & pepper to taste
1-2 Tbsp oil or ghee
Salsa Ingredients:
1 cup chopped mango
1 cup chopped pineapple
1/2 cup chopped avocado
1 jalapeño, seeded and diced small
1/4 cup diced red bell pepper
1/4 cup diced red onion
2 limes, juiced
2-3 Tbsp fresh cilantro, chopped
Directions:
Pat filets dry. Generously sprinkle flesh side with salt, pepper, sugar and Flavor God Everything Spicy seasoning. Gently pat to adhere spices.
Add oil or ghee to a cast iron skillet. Heat to medium. (Oil should start to smoke).
Place salmon filets flesh side down. Cook 2 to 3 minutes – just until salmon is slightly blackened and crispy.
Turn filets over and cook skin side down about 5 minutes, or until salmon is opaque and flakes easily. Avoid overcooking!
